Taco Stuffed Peppers

Ingredients: -Bell peppers -Ground beef -Yellow onion -Diced canned tomatoes -Instant rice -Corn  -Black Beans -Gluten free taco seasonings -Shredded cheddar cheese

Cut all of your bell peppers in half! Remove stems and seeds, then parboil to soften.

Brown ground beef. Add onions and cook with beef until soft. Next, add diced tomatoes (with juices), uncooked instant rice, beans, corn & taco seasonings. Mix well!

Preheat the oven to 350°F. While it warms up, scoop beef taco filling into blanched bell pepper halves and line in a 9x13" baking dish.

Sprinkle each half with shredded cheddar cheese and place in the preheated oven. Bake for 10-15 minutes!

Serve stuffed peppers with your favorite toppings like guacamole, sour cream and fresh pico de gallo salsa. Enjoy!
