Roasted Beet Salad With Goat Cheese

Roasted beets, mixed greens, goat cheese, walnuts & avocado all tossed together into a gorgeous, healthy salad! Creamy Balsamic Vinaigrette is highly recommended as a salad dressing option!

Ingredients

Salad

  • 2 large beets *peeled & diced
  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 4 cups mixed greens
  • ½ cup goat cheese crumbles
  • ¼ cup chopped walnuts
  • 1 medium ripe avocado *diced

Dressing suggestion: Creamy Balsamic Vinaigrette

    Instructions

    • Preheat oven to 400°F.
    • Peel and dice beets and place cubes on a baking sheet. Drizzle with olive oil and use your hands to move the beets around to coat. Sprinkle with salt and pepper.
    • Roast/bake your beets for 25-30 minutes. Once they can easily be pierced through with a fork, they are done.
    • While beets are roasting, measure mixed greens into a large mixing bowl. Add goat cheese crumbles, chopped walnuts and diced avocado.
    • Once beets are done roasting, allow them to cool down a bit. Then, add them to the mixing bowl along with everything else. Toss all ingredients together.
    • Plate salad, add dressing and enjoy!
