- 6 oz. Corn tortilla chips
- 1 lb. Ground beef *I use 97/3%
- 2 tablespoons Gluten free taco seasoning *see note below
- 8 oz. Shredded cheddar cheese
- 1 2.25oz. can Sliced black olives *drained
- ¼ cup Black beans *drained & rinsed
- 2 tablespoons Sliced canned jalapenos
- ¼ cup Refried beans
Other optional topping ideas:
- Avocado, tomatoes, sours cream, cilantro, salsa
Recipe notes:
Gluten free taco seasoning: You can buy taco-seasoning mix at the store, but if gluten is an issue for you, make sure to find a brand that is specified as gluten-free (many are not). To avoid additives and gluten, you can also make your own taco seasoning at home. It's super easy!
Preheat oven to 350°F.
Brown ground beef on the stovetop and drain excess fat.
Place a single base layer of corn tortilla chips on large baking sheet and cover with two thirds of your toppings & cheese.
Add a second, thinner layer of chips and cover with remaining toppings.
Finish with cheese and bake for 5-10 minutes. (*Tip: bake just until the cheese melts. It will quickly become crisp rather than gooey if nachos are left in the oven too long).
Serve with salsa, avocado, tomato, sour cream, etc.
Enjoy!
