Confetti Popcorn With Sprinkles & White Chocolate Drizzle

Homemade popcorn drizzled in salted white chocolate and decorated with beautiful rainbow sprinkles! The perfect party treat!

Ingredients

  • cup popped popcorn kernels *about 8 cups after popping
  • cup white chocolate chips *see note below
  • ¾ teaspoon coconut oil *see note below
  • ¼ teaspoon salt
  • 2 tablespoons rainbow sprinkles

Recipe notes:

Chocolate/coconut oil: Coconut oil is handy in this recipe because it will thin your melted chocolate, making it easier to drizzle atop popcorn. You can get by without it, but evenly distributing your chocolate will be more difficult. You can also use white chocolate candy melts instead of chips. When melted, they reach a nice drizzling texture (without coconut oil). I simply prefer the flavor of chips ever so slightly!
 

Instructions

  • Pop kernels using your preferred method (I prefer stovetop)!
  • Add salt and coconut oil to your white chocolate chips. Melt them in the microwave in 30 second intervals, stirring in-between. You can also melt chips in double broiler if preferred. (*Tip: be careful not to overheat your chocolate! It can burn in the microwave or in a double broiler which will cause it to thicken or "seize.")
  • Spread popcorn on a parchment paper lined baking sheet and pick out any un-popped kernels. Drizzle melted chocolate evenly over the popcorn.
  • Add sprinkles to the chocolate drizzled popcorn, then wait about 15 minutes for the chocolate to fully set.
  • Break popcorn into pieces and place in a serving bowl for guests to enjoy!

Storage:

  • Store in an airtight, food storage container at room temperature for up to a week!
