Instructions
If your air fryer requires preheating, fire it up to 400℉.
1 & ½ pounds boneless, skinless chicken breasts
Cut chicken into 1-inch cubes and place in a large bowl. Don't worry too much about pieces being uniform size and thickness! Some will be meaty and others crisp. This variation in texture is tasty.
Add soy sauce, oil, honey and seasonings. Mix until chicken is coated.
1 tablespoon soy sauce, 1 teaspoon toasted sesame oil, 1 teaspoon honey, ½ teaspoon salt, ½ teaspoon ground black pepper, ½ teaspoon ground ginger, ½ teaspoon paprika, ½ teaspoon garlic powder
Add coated chicken pieces to the basket of the air fryer in a single layer, leaving a little space between cubes. You'll likely need to cook two batches which isn't a huge deal because they cook pretty fast!
Air fry chicken cubes at 400℉ for 7-10 minutes. The largest piece of chicken should reach an internal temperature of at least 165℉. Use a food thermometer to check.
Garnish with a splash of fresh lemon juice (or lime juice) and chives or fresh parsley! Serve bites with spicy mayo, ranch or dipping sauce of choice and enjoy.

Storage & Reheating:
Place leftover chicken bites in an airtight container and refrigerate 3-4 days. To reheat: air fry 2-3 minutes at 400°F or until warmed though. You can also microwave leftovers, but I feel texture is best with an air fryer.
