Recipe notes:
Taco seasoning: I use Siete Brand Taco Seasonings for this recipe but any brand will work!
Cheese: I prefer to shred cheese straight from the block because it melts better. However, you can use pre-shredded, bagged cheese if desired.
Preheat oven to 350°F.
Brown beef over medium-high and drain excess fat if necessary. Add taco seasonings and water, stir well. Allow ingredients to come to a simmer, then reduce heat to low and cook 2-3 minutes until thickened and remove from heat.
1 packet taco seasonings, ⅓ cup water
Place a single base layer of corn tortilla chips on large baking sheet and cover with two thirds of your toppings, seasoned ground beef and cheese.
Add a second, thinner layer of chips and cover with remaining toppings.
Finish with cheese and bake for 5-10 minutes. (*Tip: bake just until the cheese melts. It will quickly become crisp rather than gooey if nachos are left in the oven too long).
Serve with salsa, avocado, tomato, sour cream, etc.
Enjoy!
