Spooky Roasted Sweet Potatoes

These are the perfect potatoes for Halloween! Purple bats, orange pumpkin jack-o-lanterns and white ghosts. Both adults and kids will love these spooky sweet potatoes, and they make an easy side dish for halloween dinner.

Ingredients

  • 1 medium or large white sweet potato *or russet/yukon gold potato
  • 1 medium or large orange sweet potato
  • 1 medium or large purple sweet potato *see note below
  • 1-2 tablespoons extra virgin olive oil *or avocado oil
  • Salt & pepper *see note below

Recipe notes: 

General: We have a family tradition of making sloppy joes for Halloween dinner and spooky roasted potatoes are the perfect side!
Purple sweet potatoes: Sometimes purple sweet potatoes can be hard to find. I've had really good luck spotting them at both Sprouts Farmer's Market and Asian grocery stores or markets.
Seasonings: Instead of salt and pepper, you could use cinnamon! Cinnamon and sweet potatoes are the perfect combo. 

Instructions

  • Preheat oven to 400℉.
  • Peel and very thinly slice sweet potatoes. I recommend a thickness of about ⅛ inch. Slice potatoes horizontally or vertically depending on the cookie cutter you plan to use for that color potato.
  • Cut out your shapes. Arrange potatoes in a single layer on a baking sheet. I line my sheet with foil for easier cleanup!
  • Brush potatoes with oil on both sides, then sprinkle with salt and pepper! Bake 15-20 minutes until fork tender.
  • Serve and enjoy!
