    Spooky Roasted Sweet Potatoes

    Halloween potatoes fit into the category of "food craft" in my mind. I love playing around with spooky shapes and fun decorations this time of year.

    Banana mummies, Halloween chocolate bark and pumpkin bites are also hauntingly delicious if you want some eerie sweet treats for dessert.

    What You'll Need:

    These creepy roasted potatoes require only a few simple ingredients!

    • Potatoes: White, orange and purple sweet potatoes. Sometimes purple sweet potatoes can be hard to find. I've had really good luck spotting them at both Sprouts Farmer's Market and Asian grocery stores or markets.
    • Olive oil: Extra virgin. Avocado oil would also work fine.
    • Seasonings: I keep things super simple with just salt and pepper. You can use other seasonings if you'd like! Cinnamon would be a fun variation since we're using sweet potatoes.

    How To Make Halloween Potatoes

    Peel, slice & cut:

    • Preheat oven to 400°F, then peel and rinse potatoes.
    • Slice vertically or horizontally, depending on which size cookie cutter you plan to use. Slices need to be really thin, about ⅛th inch.
    • Cut shapes!

    Prep for baking!

    • Arrange potatoes in a single, even layer on a large baking sheet. I like to line my sheet with foil for easier cleanup!
    • Brush with oil on both sides. Sprinkle with salt and pepper and bake 15-20 minutes until fork tender.

    Serve & Enjoy!

    • Allow to cool slightly, transfer to a serving plate if desired and enjoy!

    Special Equipment 👻

    For this recipe, you'll need some spooky cookie cutters. I love the ones linked here because the package comes with lots of shapes: cats, bats, pumpkins and ghosts. Each shape has three different sizes (small medium and large). They're also very affordable!

    Ingredients

    • 1 medium or large white sweet potato *or russet/yukon gold potato
    • 1 medium or large orange sweet potato
    • 1 medium or large purple sweet potato *see note below
    • 1-2 tablespoons extra virgin olive oil *or avocado oil
    • Salt & pepper *see note below

    Recipe notes: 

    General: We have a family tradition of making sloppy joes for Halloween dinner and spooky roasted potatoes are the perfect side!
    Purple sweet potatoes: Sometimes purple sweet potatoes can be hard to find. I've had really good luck spotting them at both Sprouts Farmer's Market and Asian grocery stores or markets.
    Seasonings: Instead of salt and pepper, you could use cinnamon! Cinnamon and sweet potatoes are the perfect combo. 

    Instructions

    • Preheat oven to 400℉.
    • Peel and very thinly slice sweet potatoes. I recommend a thickness of about ⅛ inch. Slice potatoes horizontally or vertically depending on the cookie cutter you plan to use for that color potato.
    • Cut out your shapes. Arrange potatoes in a single layer on a baking sheet. I line my sheet with foil for easier cleanup!
    • Brush potatoes with oil on both sides, then sprinkle with salt and pepper! Bake 15-20 minutes until fork tender.
    • Serve and enjoy!
