    Peanut Butter Chocolate Chip Pumpkin Bites

    Celebrate spooky season with these super cute, pumpkin bites! They’re the perfect seasonal snack to keep around the house or take to a Halloween party.

    Plus, decorating festive little pumpkins is a fun Halloween activity the whole family can enjoy.

    Ingredients:

    • Whole grain oats
    • Peanut butter
    • Honey
    • Mini chocolate chips
    • Water
    • White chocolate chips
    • Coconut oil
    • Orange candy coloring
    • Gold & silver sprinkles
    • Green sprinkles
    • Orange sprinkles

    Peanut Butter Chocolate Chip Pumpkin Bites

    Making Pumpkin Bites - A Quick Overview:

    Keep scrolling for the full recipe. We’ll start here with a quick rundown!

    • Mix oats, peanut butter & honey. Add water and mix again.
    • Stir in chocolate chips!
    • Use a cookie scoop to portion and roll dough into bites.
    • Measure white chocolate chips into two small bowls and melt. Add orange candy coloring to one bowl.
    • Use toothpicks to dip bites. Place on parchment paper and add sprinkles before chocolate sets.
    • Add a handful of mini chocolate chips to your orange chocolate. Melt and stir to create brown color.
    • Drizzle brown chocolate on the bite to create pumpkin ridges.
    • Place a single mini chocolate chip on the top to create a stem and add leaves.
    • Place bites in the refrigerator while they set.
    • Enjoy!

    Handy tips:

    • Candy vs food coloring: to color white chocolate you need candy coloring (not food coloring). Food coloring can make chocolate thicken or seize because it's generally liquid or gel based. Candy coloring will be oil or powder based. You might be able to find candy coloring at the grocery store, but it's more likely to be at a craft store. You can also get it online (see links).
    • Consider orange chocolate melts: If you can't find candy coloring at the grocery or craft store, look for Orange candy melts! You can also get them online (see link)!
    • Sprinkles: I use the sprinkles pictured below. You can get them on Amazon or typically Walmart. Feel free to mix up your sprinkle selections and get creative!
    • Tweezers: I highly recommend using tweezers to help with decorating. They make it much easier to create the pumpkin leaves and stem!

    Peanut Butter Chocolate Chip Pumpkin Bites

    Whole oats mixed with peanut butter, honey and chocolate chips. Dip in orange or white chocolate and add sprinkles to create a fun, festive little pumpkin bite!

    Ingredients

    Peanut Butter Oatmeal Balls

    • 1 cup whole oats
    • ½ cup peanut butter
    • 2 tablespoons honey *or agave
    • 1 tablespoon water
    • 2 tablespoons mini chocolate chips
    • 2 cups white chocolate chips *divided
    • 1 teaspoon coconut oil *divided
    • orange candy coloring *see note below
    • Gold & silver sprinkles *see note below
    • Orange sprinkles
    • Green sprinkles

    Recipe notes: 

    • Candy vs food coloring: to color white chocolate you need candy coloring (not food coloring). Food coloring can make chocolate thicken or seize because it's generally liquid/gel based.     • Sprinkles: these are the sprinkles I use for this recipe: gold & silver sprinkles, green sprinkles, orange sprinkles. I found all of them at Walmart but you can also get them on Amazon (see links). Also, feel free to get creative and use different colors and shapes!
    • Tweezers make it much easier to create the pumpkin leaves and stem!

    Instructions

    • Measure oats, peanut butter and honey into a small bowl. Use spatula to mix until well combined. Add water and mix again.
    • Stir in mini chocolate chips!
    • Form dough into 1 tablespoon sized balls (a cookie scoop is very helpful if you've got one)! If dough is crumbly, mix in another teaspoon of cold water.
    • Place bites in the refrigerator.
    • Evenly divide white chocolate chips into two small bowls and melt. Microwave for 30 seconds at a time, stopping to stir.
    • Once chips are fully melted, stir ½ teaspoon of coconut oil into each bowl and add orange candy coloring to just one.
    • Stick a toothpick into each bite. Dip into orange or white chocolate and then place on a parchment paper lined baking sheet. Add sprinkles before the chocolate sets!
    • Once all bites have been dipped, add about a tablespoon of mini chocolate chips to your orange chocolate. Melt and stir to create a brown color.
    • Drizzle brown chocolate on the bite to create pumpkin ridges.
    • Use tweezers to place a single mini chocolate chip on the top of the bite to create a stem and add small round sprinkles for leaves.
    • Place bites in the refrigerator while they set.
    • Enjoy!
