    Stuffed baked apples with cinnamon! This easy, cozy recipe will warm your home and fill it with sweet smelling goodness.

    Oven baked apples are perfect for breakfast or as a healthier dessert. Top with vanilla ice cream or swirl of cool whip if desired!

    Ingredients:

    • Apples: choose a crisp, tart varietal! I like to use Pink Lady apples.
    • Whole grain oats: hearty and delicious.
    • Cold, unsalted butter: cut into oats for a yummy, crumbly filling.
    • Gluten free flour: regular flour will work too, if you're not gluten free.
    • Cinnamon, cloves & salt: cozy, autumnal spices!
    • Vanilla extract: pure vanilla extract is best but imitation will work.
    • Brown sugar: just a touch of sweetness.
    • Pecans: for a bit of crunch!

    Making Stuffed Baked Apples With Cinnamon - A Quick Overview:

    • Preheat oven to 375°F.
    • Rinse and dry apples. Slice the very top of the apple off and core using a serrated spoon. Place apples in a baking dish (a baking sheet will also work).
    • Measure oats into a small mixing bowl. Cut cold, unsalted butter into small cubes and add to oats. Combine with a pastry cutter until crumbly.
    • Stir in gluten free flour, spices, salt, brown sugar, vanilla extract & chopped pecans.
    • Stuff apples, pack filling down so you can fit as much as possible!
    • Cover with foil and bake for 35-40 minutes.
    • Allow to cool and serve with toppings like whip cream, ice cream, cinnamon or caramel drizzle, if desired!

    HANDY TIPS:

    • Use a serrated spoon: You can use a regular spoon to core your apples, but I have found that a serrated (or grapefruit) spoon works nicely for coring apples and scooping out some of the flesh to turn it into a little "boat."

    Ingredients

    • 6 medium apples *see note below
    • 1 & ¼ cups whole grain oats
    • 5 tablespoons unsalted butter *cold from the refrigerator
    • ¼ cup gluten free flour *see note below
    • 2 teaspoons ground cinnamon
    • ¾ tespoon ground cloves
    • ¼ teaspoon salt
    • 1 teaspoon pure vanilla extract *pure is best, imitation will work!
    • 2 tablespoons brown sugar *dark or light
    • ¼ cup chopped pecans *roasted/salted *see note below

    Recipe notes:

    Apples: choose a crisp, tart variety to compliment sweet filling. I like using pink lady apples!
    Gluten free flour: I like to use Bob's Red Mill Gluten Free 1-1 Baking Flour. Regular all-purpose flour will also work in this recipe if you don't have a gluten intolerance.
    Pecans: at the store, look for pecans that are already roasted/salted. Packaging should specify! Buy whole nuts and chop them up or look for pecan "pieces." These work nicely and save a little time since you won't need to cut them up by hand.

    Instructions

    • Measure oats into a small mixing bowl. Cut cold, unsalted butter into small cubes and add to oats. Combine with a pastry cutter until crumbly. (*Tip: keep butter in the refrigerator until you're ready to use, this will make it easier to cut into oats).
    • Stir in gluten free flour, ground cloves, ground cinnamon, salt, brown sugar, vanilla extract & chopped pecans.
    • Stuff apples, pack filling down so you can fit as much as possible!
    • Cover baking dish with aluminum foil and bake 35-40 minutes, until apples are tender.
    • Allow to cool and serve with toppings like whip cream, ice cream, cinnamon or caramel drizzle, if desired!
