- Sausage: I like Kielbasa sausage, but use any kind you like. Spicy sausage is also very tasty. Just be sure to select a smoked sausage that's been pre-cooked and isn't raw. Packaging should specify.
- Red onion: I use about half a large red onion.
- Bell pepper: Any color works!
- Potato gnocchi: My favorite brand is Delallo and it's available at most grocery stores in the pasta isle. Sweet potato gnocchi would also be SO good in this recipe. If you happen to live close to a World Market store, I know they always carry like 5 different flavors of gnocchi.
- Olive oil: Or sub avocado oil.
- Seasonings: Smoked paprika (regular also works but I LOVE smoked), Italian seasonings, salt, pepper and garlic powder.

Prep ingredients:
- First, preheat oven to 425°F.
- Cut sausage into half-inch thick medallions. Chop onion and pepper into large chunks.
- Place sausage coins, cut veggies and gnocchi onto the pan. I use my half sheet pan which is 17 x 12 inches. A large pan is important because it gives everything space to roast properly. If you only have small sheet pans, I would probably use two.

Season!
- Drizzle generously with olive oil and sprinkle seasonings. Use your hands or a spoon and mix well until everything is coated. You can also season everything in a large bowl but I like to avoid the extra dirty dish.

Bake:
- Place sheet pan in the oven and bake 20 minutes.
- Plate and enjoy! You can garnish with chopped fresh parsley, basil or cilantro is desired. A little squeeze of fresh lemon juice or parmesan would also be yummy.

- Cut your veggies up nice and big for fast prep!
- Regular paprika works in this recipe but I highly suggest smoked paprika. It adds something extra special. ✨
- A nice BIG sheet pan is important for this recipe. It gives ingredients ample space to roast in the oven. I use a 17x12 inch half sheet pan. You can also use two smaller pans.
- For even easier cleanup, line your pan with aluminum foil!
- Mix everything together right on the sheet pan for fewer dishes.
Serving Suggestions
You don't have to serve anything with your sheet pan though I do think grains, bread or a dipping sauce can be nice on the side. If you want even more veggies a salad can be nice, too! Here are some ideas:

- Baja sauce, sriracha aioli, poblano sauce

Make Ahead & Storage
Make-ahead: This recipe is super make-ahead friendly. Put gnocchi, chopped veggies and sausage coins into a large bowl. You can also add the oil and seasonings if you want! Place a lid on the bowl and refrigerate until baking.
Storing leftovers: Place leftovers in an airtight container and refrigerate 3-4 days.
How to reheat: Microwave portions in 30 second intervals, on high, until warmed through completely. This recipe reheats really well and leftovers make a great lunch.

Nope! It'll cook right in the oven. Oven-baked gnocchi is so good! It gets tender on the inside and crispy on the outside.
So far, i've only tested this recipe with shelf stable gnocchi (I like the Delallo brand). I assume frozen or refrigerated gnocchi would work fine, though I'd thaw frozen before baking so it cooks uniformly with everything else.

- 14 ounce kielbasa sausage *or smoked sausage of choice *see note below
- 1 green bell pepper *sub any color
- ½ large red onion
- 2 tablespoons extra virgin olive oil *or avocado oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasonings
- ¾ teaspoon smoked paprika *see note below
- ½ teaspoon salt
- ½ teaspoon ground black pepper

- Fresh chopped basil, parsley or cilantro. A squeeze of fresh lemon juice. Parmesan cheese!
