Pumpkin French Toast

Thick slices of bread dipped in custardy pumpkin batter seasoned with warm spices and fried on a skillet pan until perfectly golden brown. This twist on classic french toast is the ultimate fall breakfast made in under 30 minutes.

Ingredients

  • 3 large eggs
  • cup 2% milk *or milk of choice, see note below
  • ½ cup pumpkin puree *not pumpkin pie filling
  • 2 tablespoons pure maple syrup + more for serving
  • 1 teaspoon pure vanilla extract *or imitation vanilla
  • ¼ teaspoon salt
  • 1 teaspoon pumpkin pie spice *or ground cinnamon
  • 8-10 thick slices bread *see note below

Optional toppings:

  • Butter, whipped cream, extra maple syrup, cinnamon, nuts, fruit

Recipe notes: 

Milk: You can use any type of milk, plant-based included. Soy milk, oat milk, almond milk, you name it!
Bread: This recipe makes 8-10 pieces depending on how much liquid each slice soaks up. Work fast when dipping toast in pumpkin mixture to avoid overly soggy pieces. Sturdier, thick cut Texas toast bread works best if you can find it. You can also slice a sour dough or french bread baguette by hand!
Stale bread: Having issues with your bread soaking up too much liquid? Let it sit out for a while. Stale bread soaks up less batter.

Instructions

  • Add batter ingredients to a large mixing bowl and whisk well.
    3 large eggs, ⅔ cup 2% milk, ½ cup pumpkin puree, 2 tablespoons pure maple syrup, 1 teaspoon pure vanilla extract, ¼ teaspoon salt, 1 teaspoon pumpkin pie spice
  • Place a large skillet pan on the stovetop and turn heat to medium. Coat with non-stick cooking spray and let the skillet get nice and hot.
  • Dip bread in pumpkin custard and coat both sides with the batter. Work quickly to avoid over-soaking and soggy french toast.

  • Line battered bread on your hot skillet and cook 2-3 minutes per side until golden.
  • Add your favorite toppings like butter, maple syrup, pumpkin sauce, cinnamon, whipped cream or toasted nuts. Enjoy!

Make Ahead Instructions

  • Want to plan ahead? Make french toast batter in a mixing bowl, cover with plastic wrap and refrigerate until you're ready to cook (up to 24 hours)! Give mixture another good whisk before dipping bread slices.

Storing leftovers

  • Place leftovers in an airtight container and store in the fridge for 2-3 days. Reheat in the microwave or on a skillet on the stovetop.
