The Perfect Fall Breakfast
Fast: French toast is a speedy endeavor. Whisk up the batter, dip the bread and cook on a skillet. You'll be done in under 30 minutes.
Simple: So easy, so straightforward and only 8 common ingredients.
Delicious: It's like eating pumpkin pie for breakfast. Don't forget to pair with a big cup of steaming hot coffee! Pumpkin spice flavors and coffee are a match made in heaven.
What You'll Need
- Eggs: The base for our custardy french toast batter.
- Milk: I generally use 2% but any will work, plant-based options included.
- Pumpkin puree: Typically found in the baking isle at most grocery stores! Be sure you're buying pure pumpkin puree and not pumpkin pie filling which comes pre-sweetened. You can also make homemade pumpkin puree!
- Maple syrup: I put a glug of maple syrup right in my batter, and of course, serve extra on the side. Sub white or brown sugar if that's what you have.
- Vanilla: Pure vanilla extract is best, but imitation does the trick.
- Seasonings: Salt and pumpkin pie spice (or ground cinnamon).
- Bread: Any type of bread will work, but I recommend buying thicker cut if possible. You can also buy a baguette from the bakery and cut it into thick slices yourself.

Making French Toast

Make batter:
- Crack eggs into a large mixing bowl. Add milk, pumpkin puree, maple syrup, vanilla extract, salt and pumpkin pie spice.
- Whisk well!

Dip bread!
- Dip each slice of bread in the egg mixture and coat both sides with batter. Avoid soggy french toast by working quickly so the bread doesn't soak up too much liquid.

Cook:
- Coat skillet with non-stick cooking spray or butter. Fry battered bread over medium heat for 2-3 minutes per side until golden brown.

Serve and enjoy:
- Add toppings like butter, whipped cream, powdered sugar and a drizzle of maple syrup. Enjoy!

Over-soaked slices of bread can result in soggy toast. Different types of bread will soak up more or less liquid. Having issues with bread soaking up too much batter? Let it sit out and get stale. Stale bread is less absorbent.

French Toast Toppings
- Syrup: Regular pancake syrup or pure maple syrup (pricier but worth it in my opinion)!
- Pumpkin sauce: I use this sweet sauce in homemade pumpkin spice lattes, but it's also fabulous drizzled on pancakes and french toast.
- Whipped cream: Just a swirl of creamy deliciousness.
- Butter: I like the contrast of salty butter and sweet syrup.
- Powdered sugar: Tastes great and makes your breakfast look like a snowy wonderland.
- Fresh fruits: Banana slices or berries!
- Nuts: A handful of toasted walnuts, pecans or almond slices.
- Cinnamon: Sprinkle on some extra cinnamon or pumpkin pie spice.

Milk: You can use any type of milk, plant-based included. Soy milk, oat milk, almond milk, you name it! Bread: This recipe makes 8-10 pieces depending on how much liquid each slice soaks up. Work fast when dipping toast in pumpkin mixture to avoid overly soggy pieces. Sturdier, thick cut Texas toast bread works best if you can find it. You can also slice a sour dough or french bread baguette by hand! Stale bread: Having issues with your bread soaking up too much liquid? Let it sit out for a while. - Want to plan ahead? Make french toast batter in a mixing bowl, cover with plastic wrap and refrigerate until you're ready to cook (up to 24 hours)! Give mixture another good whisk before dipping bread slices.
Storing leftovers
- Place leftovers in an airtight container and store in the fridge for 2-3 days. Reheat in the microwave or on a skillet on the stovetop.
