    I love making this french toast or pumpkin cottage cheese pancakes for breakfast in the 'ber months. Both are perfect with a side of bacon or fluffy scrambled eggs.

    And don't forget pumpkin belongs in savory recipes too! Pumpkin sausage soup or pumpkin chicken curry are elite fall dinners.

    The Perfect Fall Breakfast

    Fast: French toast is a speedy endeavor. Whisk up the batter, dip the bread and cook on a skillet. You'll be done in under 30 minutes.

    Simple: So easy, so straightforward and only 8 common ingredients.

    Delicious: It's like eating pumpkin pie for breakfast. Don't forget to pair with a big cup of steaming hot coffee! Pumpkin spice flavors and coffee are a match made in heaven. 

    What You'll Need

    • Eggs: The base for our custardy french toast batter.
    • Milk: I generally use 2% but any will work, plant-based options included.
    • Pumpkin puree: Typically found in the baking isle at most grocery stores! Be sure you're buying pure pumpkin puree and not pumpkin pie filling which comes pre-sweetened. You can also make homemade pumpkin puree!
    • Maple syrup: I put a glug of maple syrup right in my batter, and of course, serve extra on the side. Sub white or brown sugar if that's what you have.
    • Vanilla: Pure vanilla extract is best, but imitation does the trick.
    • Seasonings: Salt and pumpkin pie spice (or ground cinnamon).
    • Bread: Any type of bread will work, but I recommend buying thicker cut if possible. You can also buy a baguette from the bakery and cut it into thick slices yourself.

    Ingredients

    Making French Toast

    Make batter:

    • Crack eggs into a large mixing bowl. Add milk, pumpkin puree, maple syrup, vanilla extract, salt and pumpkin pie spice.

    Dip bread!

    • Dip each slice of bread in the egg mixture and coat both sides with batter. Avoid soggy french toast by working quickly so the bread doesn't soak up too much liquid.

    Cook:

    • Coat skillet with non-stick cooking spray or butter. Fry battered bread over medium heat for 2-3 minutes per side until golden brown.

    Serve and enjoy:

    • Add toppings like butter, whipped cream, powdered sugar and a drizzle of maple syrup. Enjoy!

    Stacey's Top Tip ☕

    Over-soaked slices of bread can result in soggy toast. Different types of bread will soak up more or less liquid. Having issues with bread soaking up too much batter? Let it sit out and get stale. Stale bread is less absorbent.

    French Toast Toppings

    • Syrup: Regular pancake syrup or pure maple syrup (pricier but worth it in my opinion)!
    • Pumpkin sauce: I use this sweet sauce in homemade pumpkin spice lattes, but it's also fabulous drizzled on pancakes and french toast.
    • Whipped cream: Just a swirl of creamy deliciousness.
    • Butter: I like the contrast of salty butter and sweet syrup.
    • Powdered sugar: Tastes great and makes your breakfast look like a snowy wonderland.
    • Fresh fruits: Banana slices or berries!
    • Nuts: A handful of toasted walnuts, pecans or almond slices.
    • Cinnamon: Sprinkle on some extra cinnamon or pumpkin pie spice.

    Pumpkin French Toast

    Thick slices of bread dipped in custardy pumpkin batter seasoned with warm spices and fried on a skillet pan until perfectly golden brown. This twist on classic french toast is the ultimate fall breakfast made in under 30 minutes.

    Equipment

    • 1 Griddle pan or large skillet

    Ingredients

    • 3 large eggs
    • ⅔ cup 2% milk *or milk of choice, see note below
    • ½ cup pumpkin puree *not pumpkin pie filling
    • 2 tablespoons pure maple syrup + more for serving
    • 1 teaspoon pure vanilla extract *or imitation vanilla
    • ¼ teaspoon salt
    • 1 teaspoon pumpkin pie spice *or ground cinnamon
    • 8-10 thick slices bread *see note below

    Optional toppings:

    • Butter, whipped cream, extra maple syrup, cinnamon, nuts, fruit

    Recipe notes: 

    Milk: You can use any type of milk, plant-based included. Soy milk, oat milk, almond milk, you name it!
    Bread: This recipe makes 8-10 pieces depending on how much liquid each slice soaks up. Work fast when dipping toast in pumpkin mixture to avoid overly soggy pieces. Sturdier, thick cut Texas toast bread works best if you can find it. You can also slice a sour dough or french bread baguette by hand!
    Stale bread: Having issues with your bread soaking up too much liquid? Let it sit out for a while. Stale bread soaks up less batter.

    Instructions

    • Add batter ingredients to a large mixing bowl and whisk well.
      3 large eggs, ⅔ cup 2% milk, ½ cup pumpkin puree, 2 tablespoons pure maple syrup, 1 teaspoon pure vanilla extract, ¼ teaspoon salt, 1 teaspoon pumpkin pie spice
    • Place a large skillet pan on the stovetop and turn heat to medium. Coat with non-stick cooking spray and let the skillet get nice and hot.
    • Dip bread in pumpkin custard and coat both sides with the batter. Work quickly to avoid over-soaking and soggy french toast.

    • Line battered bread on your hot skillet and cook 2-3 minutes per side until golden.
    • Add your favorite toppings like butter, maple syrup, pumpkin sauce, cinnamon, whipped cream or toasted nuts. Enjoy!

    Make Ahead Instructions

    • Want to plan ahead? Make french toast batter in a mixing bowl, cover with plastic wrap and refrigerate until you're ready to cook (up to 24 hours)! Give mixture another good whisk before dipping bread slices.

    Storing leftovers

    • Place leftovers in an airtight container and store in the fridge for 2-3 days. Reheat in the microwave or on a skillet on the stovetop.
