Sweet potatoes: I typically use sweet potatoes with orange skin and flesh but white or purple varieties will also work. You could even mix different colors if desired!
Olive oil: extra virgin olive oil is used to coat sweet potato chunks in this recipe. This keeps them hydrated and helps seasonings to stick.
Seasonings: salt, pepper and crushed/dried rosemary are my go-to. This combo is really tasty but you can really use any seasonings you like.
How To Air Fry Sweet Potato Chunks

Step 1
If your air fryer requires preheating, turn it on first thing and set temperature to 400°F.
Peel a large sweet potato and cut it into one inch cubes. I prefer to cut my potato into rounds first. Then, I chop rounds into small chunks.

Place potato cubes in a large mixing bowl and drizzle them with a tablespoon of olive oil.
Step 3
Add seasonings and stir well until all pieces are coated.
Step 4
Transfer diced sweet potatoes to your air fryer basket and arrange in a single layer. This layer doesn't have to be perfectly flat, you can have some overlap.

Air fry at 400°F for about 15 minutes. For best results, shake cubes halfway through so they brown on all sides. Allow potatoes to cool down a bit and enjoy!

Potatoes: I generally buy orange sweet potatoes, but you can also use purple or white (a mix of multiple colors would also be fun)! Half regular potatoes, like russet or gold, and half sweet potatoes would also be yummy.
Roast: roasting your potato cubes in the oven takes quite a bit longer, but it is an option if you don't have an air fryer. Simply preheat your oven to 400°F and spread sweet potato cubes on a large baking sheet. Bake for 30 minutes, stirring halfway through.
