    Roasted beet and goat cheese salad with walnuts and diced avocado is so incredibly tasty! On top of that, it's good for you and really easy to make! Healthy and full of flavor, what could be better? Beet and goat cheese salad is a great make ahead lunch or dinner side. Gluten free & vegetarian - rated 10/10 by family and friends.

    • Preheat your oven to 400°F.
    • Peel and dice beets. Place cubes on a baking sheet, drizzle with olive oil and use your hands to move them around to fully coat.
    • Sprinkle cubes with salt and pepper and bake for about 30 minutes. Once beets can be easily pierced through with the prongs of a fork, they are done.
    • While beets roast, place mixed greens, diced avocado, goat cheese crumbles and chopped walnuts in a large mixing bowl.
    • In a separate, smaller mixing bowl, make your salad dressing.
    • Once your beets are done roasting, add them to the bowl and toss all ingredients together.
    • Plate salad, add dressing and enjoy!

    Beet and goat cheese salad is an excellent make ahead lunch all on it's own. If you're having it for dinner, you'll probably want to pair it with a main course! Here are some ideas:

    Beet & goat cheese salad dressing:

    I prefer a creamy balsamic vinaigrette on this salad! If you're craving something a little sweeter, a poppy seed dressing would also be delicious.

    Handy tips:

    • A good vegetable peeler will make prepping your beets so much easier! For the longest time I used an old, dull peeler and dreaded working with thick skinned veggies. Finally, I broke down and bought a new, heavy duty vegetable peeler (pictured below). It was super affordable so I'm not sure why I waited so long! It's the best purchase I've made in a while. Highly recommend!

    Ingredients

    Salad

    • 2 large beets *peeled & diced
    • 1 tablespoon extra virgin olive oil
    • ¼ teaspoon salt
    • ¼ teaspoon pepper
    • 4 cups mixed greens
    • ½ cup goat cheese crumbles
    • ¼ cup chopped walnuts
    • 1 medium ripe avocado *diced

    Dressing suggestion: Creamy Balsamic Vinaigrette

    Instructions

    • Preheat oven to 400°F.
    • Peel and dice beets and place cubes on a baking sheet. Drizzle with olive oil and use your hands to move the beets around to coat. Sprinkle with salt and pepper.
    • Roast/bake your beets for 25-30 minutes. Once they can easily be pierced through with a fork, they are done.
    • While beets are roasting, measure mixed greens into a large mixing bowl. Add goat cheese crumbles, chopped walnuts and diced avocado.
    • Once beets are done roasting, allow them to cool down a bit. Then, add them to the mixing bowl along with everything else. Toss all ingredients together.
    • Plate salad, add dressing and enjoy!
